SHALL WE DANCE?
Frank Wilden, an award-winning restaurateur in Australia, shared the following analogy he uses to describe to staff,
interested parties etc, the relationship between the FOH and the BOH:
"For a restaurant to operate successfully, it is necessary for the front-of -house and back of house staff to move with each
other as dance partners would at the highest level of competitive dancing. In any dance, someone has to lead. For a
restaurant to be successful, it must be the FOH who leads. Why? Because they are the ones who can most clearly hear and
appreciate the music being played. Why? Because they are closest to the people playing the music - the customers!. This
might be seen as going against the trend in this era of superstar chefs. However for the movement of the restaurant to be "in
time" with the music being played, the front must lead, always being careful not to stand on their partners toes."
