The Daily Diary of a Wandering Restaurateur
May 7 - Dining in Cortona

Trattoria La Grotta is our favorite restaurant in Cortona.

Dolce Vita does a superb job of merchandising. While other gelato places just have pans of product, they mound the containers high, label them clearly (in Italian and English) and garnish the pans. The impression is that they offer much more than just a cup of gelato ... and they do. The place is always mobbed! Perhaps it is time to take a look at how you are presenting things ...

One final great idea from Ristorante Masolino in Panicale. They put a large centerpiece in the middle of a long six-top to make two very private deuces. One such table had a large flower arrangement, ours had a 24" snifter with a candle in it to break up the visual connection between either end of the table. Need a six-top? Remove the centerpiece and voila!
